The glucose from the raw honey goes from the gut to the liver to the circulatory system, causing a mild glucose spike, which in turn causes a controlled insulin release from the pancreas into the circulatory system, which in turn releases tryptophan into the brain. The tryptophan (who’s getting sleepy?) is converted into serotonin, which helps promote relaxation, and is then converted by the pineal gland into melatonin — an important hormone that helps control your sleep-wake cycles. Melatonin then activates the release of growth hormone, which is in charge of the all-important recovery physiology. The repairing, building and maintenance of our body begins.

Simultaneously, the liver first converts the fructose in raw honey into glucose, then glycogen, which sustains the brain throughout the night. (The fructose also prevents a spike in glucose and insulin as referred to earlier.) When the liver is adequately supplied with glycogen, stress hormones stay put and aren’t released, creating a physiological environment that is peaceful and truly at restorative rest.
